Chickpeas go well with cauliflower, so here is a salad that makes the most of this with sliced radishes for extra crunch.

Step by step recipe


Stage 1 - 10 min.
Cauliflower and chickpea salad
Prepare 1 lb + 12.2 oz cauliflower, slice and put in a bowl.

Stage 2 - 5 min.
Cauliflower and chickpea salad
Add 10 radishes in thin slices (a mandolin is ideal for this).

Stage 3 - 1 min.
Cauliflower and chickpea salad
Add 10.6 oz tinned (canned) chickpeas.

Stage 4 - 3 min.
Cauliflower and chickpea salad
Add the chopped herbs, 5.3 oz Rémoulade dressing and mix well. Your salad is ready.
Remarks
If you are not keen on rémoulade dressing, use a simple french dressing (vinaigrette) instead.
Keeping
1 or 2 days in the fridge, covered with plastic film.
