Cauliflower coconut curry
Curry sauces are often heavy with cream, but here's one that's non-dairy, made with coconut milk, so much lighter. It's every bit as delicious.

Step by step recipe


Stage 1 - 10 min.
Cauliflower coconut curry
Preheat the oven to 390°F (200°C).

Prepare 1 cauliflower, put in a bowl and add 4 tablespoons olive oil, 2 tablespoons sesame seeds, salt and pepper. Mix well.

Stage 2 - 20 min.
Cauliflower coconut curry
Spread the cauliflower out on a sheet of cooking parchment laid on a baking sheet.

Roast in the oven for 15-20 minutes.

Stage 3 - 4 min.
Cauliflower coconut curry
Meanwhile, Prepare 1 onion and chop finely.

Set aside.

Stage 4 - 10 min.

Prepare 1 leek and slice thinly.

Set aside.

Take the cauliflower out of the oven once it is nicely browned.

Stage 6 - 1 min.
Cauliflower coconut curry
Heat 3 tablespoons olive oil in a large saucepan on medium heat. When good and hot, add the chopped onion.

Salt, pepper and cook for 1 minute without colouring.

Stage 7 - 3 min.
Cauliflower coconut curry
Add the sliced leek, salt lightly, mix well and cook for a further 2 or 3 minutes.

Stage 9 - 5 min.

...then 2 tablespoons curry powder and the juice of ½ lime. Mix well and leave to simmer on low heat for about 5 minutes, stirring from time to time.

Check the seasoning.

Remarks
If you're not keen on the combination of sweet and savoury, don't worry, the coconut milk adds only a hint of sweetness to the recipe, without being sugary.

To pep up the flavour, add the zest of the lime as well in stage 9.
